
SCALING WITH STONE: PIESANOS’ GROWTH JOURNEYS
Before Piesanos Stone Fired Pizza was even created, the owners had worked with deck ovens in their previous restaurant; when they started brainstorming about Piesano’s, they knew they had to find a different solution to make it scalable. That’s when they found out about Hot Rocks and decided to open in 2009 using our granite stone conveyors (yes, that first store is still running with the same old Hot Rocks).
The Hot Rocks’ ease of use helped them reduce training complexity, and the consistent bake ensures that every pizza, whether in Gainesville or The Villages, meets the same high standards. It also allowed Piesano’s to standardize their kitchen operations across all their locations while still delivering the authentic stone-baked pizza experience that defines their brand. Today, they’ve now grown to 15 stores across Florida and counting.
Piesano’s story is a great example of how thoughtful equipment choices can support both growth and culinary integrity.
